Going Dairy-Free: Is It Really Necessary?

These days, going "dairy-free" has almost become an expected requirement if you want to eat healthy. I assumed when writing my cookbook, Meals That Heal, I would need to include a section on why we all should cut out dairy. But before I write anything nutrition-related, I always study the most updated research, and after reading what we currently know about dairy, I can't say that it's necessarily bad. In fact, it's got some key nutrients that many of us are lacking, including Vitamin D and calcium.

A lot of information out there on following a dairy-free diet is really confusing and highly individualized. What works for one person may not work for someone else.
