It’s mid-September, and we’re in full-on school mode (at least virtually). But in Alabama, the temperatures are still reaching the mid-90’s and humidity is high. This means some days it just feels too hot to cook.

There’s nothing that I love more than a meal in a bowl - except for a meal in a bowl that I don’t have to cook. Use a store-bought dressing and seasoned toasted chickpea to make it even easier!

Use ready-to-heat pouches of cooked quinoa for no stovetop cooking. Enjoy as a meatless main dish or make it more filling by adding rotisserie chicken.
