We take Mexican food pretty seriously around my house.  Taco Tuesday quickly becomes Fajita Friday and next thing you know, we've had some sort of Mexican inspired dish for an entire week!  I have a feeling I'm not alone though, right?  ...Right??

Today I want to share with you one of my favorite salsas : Mexican Avocado Salsa.  If you've been following along, you've probably already heard me rave about my Avocado Feta Salsa.  It is so simple and so, so good, that I find myself making it all the time.  Though my Mexican Avocado Salsa has a few more ingredients and takes a little bit longer to prepare, it is still so quick to assemble that you'll find yourself throwing it together for get togethers all year long.  

Mexican Avocado Salsa is perfect to serve with chips or as a topping for all of your other favorite dishes - tacos, quesadillas, salads and burritos.  You'll love the hint of lime, dash of cilatro and crumbled queso fresco.  When assembled, it is the perfect combination of two of my favorite things : guacamole and salsa!

Mexican Avocado Salsa

When prepared, this salsa is a perfect combination of two of my favorite things : guacamole and salsa! Perfect for any get together served with chips or a great topping for other dishes, such as tacos, quesadillas and salads.

INGREDIENTS

  • 1 cup corn (canned or frozen)

  • 4-6 roma tomatoes, diced

  • 4 green onions, chopped

  • 2 ripe avocados, diced

  • 1/4 cup queso fresco, crumbled

  • 2-3 limes' juice

  • 3-4 tablespoons cilantro

  • 1 tablespoon olive oil

  • 1 tablespoon red wine vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

METHOD

  1. Combine all ingredients in a large bowl. Serve with chips or use as topping for other dishes.
