5 Quick, School-Night Dinner Options

With school in full swing, I can start to feel stretched too thin between work, after-school activities, and homework. With the school-year being as busy as it is, sometimes I could use a break! But since that isn’t happening anytime soon, I decided to see what I could streamline and simplify in the kitchen AFTER school.

Healthy, quick dinners are always a life saver around my house, so I am pulling together five of my family’s favorites! These are no-fail dinners that your kids are sure to love, and they’re perfect for any time of the year. They take very minimal prep and can be whipped up just as fast as a trip through the drive-thru!

Quick Tortellini Skillet

You can’t mess this one-dish dinner up, and it’s ready in just 9 minutes (really!). Your biggest problem will be that the kids haven’t finished setting the table by the time it’s ready!


Bean and Rice Burritos

I like making extra portions of rice and using them later in the week for quick meals like these delicious burritos. They are protein-packed, easy to pull together, and can be customized to everyone’s preferences. These are always a crowd (and budget!) pleaser.


Sheet Pan Balsamic Chicken & Veggies

Nothing beats the convenience of a sheet pan dinner. They're quick, require little prep, and usually appeal to even the pickiest eaters because everything is separate. I also love that there’s only one pan to clean!


Deconstructed Tacos

My kids call them nachos, but I prefer to call them “deconstructed tacos” to make me feel a little more gourmet on a busy Monday night. These are perfectly simple and customizable, and my kids love topping them with my Turkey Taco Filling.


Mom’s Healthy Pan-Fried Chicken

A family-favorite: “Mom’s Chicken” is actually how my kids refer to this dish, and I have to admit that it’s a good one!
