Easy Instant Pot Brown Rice

Over the past few years, I’ve become a big fan of ready-to-heat pouches of brown rice and other whole grains, as they have been an ideal solution on busy school nights for a healthy side dish in literally 90 seconds.  But right now with our days being spent at home, there’s not shuttling kids to extracurricular activities or getting home late from work – and little excuse to spend a little extra on whole-grain pouches.

I’ve been using up my pantry supply of dry grains, but I’ve also realized that even when you have plenty of time some of these whole grains - brown rice to name one in particular - can be tricky to get just right. So with plenty of time and the kitchen one room away from my office, I’ve been experimenting with rice in the Instant Pot. And today I’m sharing what works for me with my Instant Pot Brown Rice recipe!

It took some experimenting and several batches of brown rice that either came out a little crunchy or a little mushy. But I finally figured out to cook dry brown rice in the Instant Pot perfectly!

Instant Pot Brown Rice

Makes Approx. 6 Cups

All Instant Pots differ slightly in their cooking, but I recommend starting with these guidelines and adjusting to your pot from there. 

INGREDIENTS

  • 2 ¼ cups chicken broth or water

  • 2 cups brown rice 

METHOD

  1. Combine broth and rice in Instant Pot. Secure and seal lid. Cook 12 minutes HIGH (and NOT on Rice setting). 

  2. When done, release steam using natural release method for at least 10 minutes. Carefully remove lid. Fluff rice with a fork. Let cool slightly.
