Simple Lime Vinaigrette

I’m a recovering multi-tasker – actually can’t say I’m “recovering” yet, but I’m making an effort to focus on one thing at a time! And what better way to focus than on a MULTI-PURPOSE recipe like this SIMPLE LIME VINIAGRETTE to get that uber-productive, multi-tasking-like fix?!

Simple Lime Vinaigrette is my new favorite spring dressing. It’s fresh and light, and here are all the ways I like to use it:

  • Toss it over salad greens

  • Use it as a base for a black bean salad

  • Drizzle over roasted vegetables or fresh tomato slices

  • Use it as a marinade for chicken or fish

This dressing is so versatile, you’ll love using it all spring AND summer. If you’re looking to make a salad for 4 to 8 people, simply cut the recipe in half.
