Zucchini-Corn Saute with Feta

Zucchini-Corn Saute with Feta

Gluten-free, Vegetarian

Makes 4 1/2 cups

Total Time: 15 minutes

active Time: 10 minutes

If using frozen, let the corn thaw at room temperature before cooking.

  • 1 Tbsp olive oil

  • 3 cloves garlic, minced

  • ¼ tsp dried oregano

  • ¼ tsp dried dill

  • ¾ tsp onion powder

  • 3 zucchinis, diced (about 1 ¼ lb)

  • 1 ½ cups corn, fresh or frozen

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 Tbsp fresh lemon juice

  • 1 tsp lemon zest

  • ¼ cup fresh chopped basil

  • ¼ cup crumbled feta

  1. Heat oil in a skillet over medium heat. Cook garlic in hot oil 1 minute or until fragrant.

  2. Add zucchini, corn, and onion powder to the skillet. Sauté 4 minutes. Stir in oregano and dill 1 to 5 minutes or until zucchini beginning to turn tender.

  3. Remove skillet from heat. Add salt, pepper, lemon juice, lemon zest, basil, and cheese. Toss gently to combine and serve immediately. If desired, top with additional feta and chopped basil.
