Mango Salsa
Anyone else feel like their living a 4th of July version of the movie Groundhod Day?
While I’m not quite ready for Monday, I am craving some healthier, fresher foods in place of BBQ and traditional carb-heavy cookout foods, so I’m throwing together just the salsa part of my Fish Tacos with Mango Salsa.
Toss sweet mango tossed with fresh lime juice and a touch of jalapeno for spice and it’s the perfect side, salsa, or topping for pretty much anything coming off the grill - not to mention super quick and easy!
Mango Salsa
Perfect served with chips or on top of tacos, grilled chicken or grilled pork.
Ingredients
- 2 mangoes, diced (about 3 cups) 
- 1 cup red onion, diced 
- 1 jalapeño, diced and seeded 
- ½ cup fresh cilantro, chopped 
- 1-2 tablespoons lime juice (approx. 1 lime) 
- ¼ teaspoon sea salt 
Method
- Combine all ingredients in a large bowl. Season to taste. Serve with chips or as topping to tacos, grilled chicken or pork. 
Makes 8 (½ cup) servings
