I love tailgating on the Quad here in Tuscaloosa, but I have to admit that I am just little excited about a low-key weekend with Alabama playing away. Sheet Pan Balsamic Chicken & Veggies

Monday or Tuesday nights are often my "sheet pan" nights since they make meal prep simple while that beginning-of-the-week stress tends to be high.
